Potjie Kos (Pot Food) Recipe Book

Known in Africa as the 'potjie'
- pronounced   "poi-key", our cast iron pots came to the African continent during the late middle ages with the Dutch and English settlers. The potjie has co-existed with African culture for centuries, refining this historic & age old pot style.

The modern replica is finely cast and fully PRE-SEASONED for your convenience. The potjie has romanced the heart of all dutch oven fanatics, including the USA's greatest dutch oven chef, Colleen Sloan.

CARING FOR YOUR POTS

Have fun and enjoy those wonderful mouth-watering potjie kos - pot stews.
Before using the pot for the first time:
  • No need to cure pot. Pot has been cured in the factory. However it needs to be cleaned on the inside before using it as it has a lot of metal dust and dirt from the foundry.
  • Scour the inside of the pot and the underside of the lid using a cleaner like Comet with steel wool. Rinse with water.
  • Fill with water and bring to the boil. This will help remove any gases or impurities in the pours of the cast metal. This should be sufficient to clean the pot.
  • If going to store the pot before using it, you need to oil the inside of the pot and the underside of the lid. Pour a small quantity of olive or vegetable (cooking) oil into the pot. Using a clean cloth or paper towel, rub the inside of the pot with the oil and the underside of the lid. Wipe out any excess oil. Storing the pot - place a clean paper towel in to the pot - this will absorb any moisture that forms in the pot.
Cleaning the pot after use:
  • Scrap out any burnt food on the inside of the pot. An old serving spoon works great.
  • Fill inside of the pot with warm water, let soak and then scour clean - using a scouring cleaner like Comet and steel wool. If there is some "resistant" stuff on the inside of the pot, we have found that dish washing powder works wonders. Place some dish washing powder in the pot, add water and mix - let stand for a couple of hours - then scour clean.
  • Dry the pot. Best to dry the pot over a heat source, but regular drying with a cloth works fine. Coat the inside of the pot and the underside of the lid with olive or vegetable (cooking) oil.
  • Storing the pot - place a clean paper towel in to the pot - this will absorb any moisture that forms in the pot.
Ongoing maintenance and care for your pot:
  • If your pot develops some rust spots on the inside of the pot, no problem. Using steel wool and a scouring cleaner like Comet, scrub the rust off. Rinse and coat the inside of the pot with either olive or vegetable oil.
